- Ingredients: 1 cup soaked Sheel Sabudana, ½ cup roasted peanuts (coarsely crushed), 1 medium potato (boiled and cubed), 1-2 green chilies (finely chopped), 1 tsp cumin seeds, 1 tbsp ghee or oil, salt (or Rock Salt/Sendha Namak for fasting), and fresh cilantro.
- Step 1: In a mixing bowl, gently toss the plump, soaked sabudana with the crushed roasted peanuts and salt until evenly coated. (This prevents the pearls from sticking together in the pan).
- Step 2: Heat ghee or oil in a pan. Add cumin seeds and green chilies; let them splutter. Add the cubed boiled potatoes and sauté for 2 minutes until slightly golden.
- Step 3: Reduce the heat to low. Add the sabudana-peanut mixture to the pan. Stir continuously but gently for 3–5 minutes until the pearls turn translucent.
- Step 4: Cover with a lid and let it steam on low heat for 2 minutes. Garnish with fresh cilantro and a squeeze of lemon juice. Serve hot!

- Ingredients: 1 cup soaked Sheel Sabudana, 2 medium potatoes (boiled and mashed), ½ cup roasted peanuts (coarsely crushed), 1 tsp cumin seeds, 1-2 green chilies (finely chopped), ginger paste (optional), salt to taste, and oil for frying.
- Step 1: In a large bowl, combine the soaked sabudana, mashed potatoes, crushed peanuts, green chilies, cumin seeds, and salt.
- Step 2: Mash and knead the mixture together thoroughly. The starch from the potatoes and sabudana should bind everything into a dough-like consistency.
- Step 3: Divide the dough into small portions. Roll them into balls and gently flatten them between your palms to form smooth patties (vadas). Ensure there are no major cracks on the edges.
- Step 4: Heat oil in a deep pan on medium-high heat. Carefully slide the vadas into the hot oil. Fry until they puff up, turn deeply golden brown, and get crispy on both sides. Drain on a paper towel and serve with mint chutney.

- Ingredients: ½ cup soaked Sheel Sabudana, 4 cups whole milk, 4-5 tbsp sugar (adjust to taste), ¼ tsp cardamom powder, a pinch of saffron strands, and 2 tbsp chopped nuts (cashews, almonds, pistachios).
- Step 1: In a heavy-bottomed pan, bring the whole milk to a boil. Reduce the heat and let it simmer for 5–7 minutes, stirring occasionally so it doesn't stick to the bottom.
- Step 2: Add the soaked and drained sabudana to the simmering milk. Cook on medium-low heat for about 10–12 minutes. Stir frequently. The kheer is ready when the pearls float to the top and look like translucent glass marbles.
- Step 3: Stir in the sugar and saffron strands. Simmer for another 3–5 minutes until the sugar dissolves completely and the kheer thickens slightly.
- Step 4: Turn off the heat. Stir in the cardamom powder and garnish with chopped nuts. Serve warm, or chill it in the refrigerator for a refreshing cold dessert.
